Vermont Maple Syrup Muffins Recipe

Ingredients:

2 c of flour
2 tsp of baking powder
1/2 c of sugar (brown)
1/2 tsp of salt
1 pc of egg
1/3 c of butter; melted
1 c of yogurt (plain)
1/2 c of walnuts; chopped coarsely
1/2 c of maple syrup

For the Topping:
2 Tbsps of walnuts; chopped
1/2 tsp of cinnamon
3 Tbsps of sugar (brown)
3 Tbsps of flour
2 Tbsps of butter (cold)

Instructions:

Combine salt, baking powder, sugar (brown) and flour in one bowl and syrup, yogurt, egg and butter in separate bowl. Mix the two mixtures together and mix ’til moist. Spread into muffin tin cups that have been paper-lined or greased.

Create the topping by combining 3 Tbsps of flour, 3 Tbsps of sugar (brown), 2 Tbsps of chopped walnuts, 1/2 tsp of cinnamon and 2 Tbsps of cold butter in food processing machine or blender then whirl ’til crumbly. Drizzle this mixture above muffins and bake 15-20 mins, 400 deg Fahrenheit.
