Upside Down Lemon Coconut Muffins Recipe
Ingredients:
For the Topping:
2 Tbsps of flour
1/2 c of sugar (brown)
1/2 c of coconut
3 Tbsps of butter; melted
1/8 tsp of nutmeg
For the Muffins:
1 Tbsp of baking powder
2 c of flour; sifted
1/6 Tbsp of salt
1 pc of egg
1/4 c of sugar
1 c of milk
1/4 tsp of nutmeg
3 Tbsps of butter; melted
1 Tbsps of lemon peel; grated
1 Tbsps of lemon juice
Instructions:
Create topping by mixing, 1/2 c of coconut, 1/2 c of sugar (brown), 2 Tbsps of flour, 3 Tbsps of butter (melted) and 1/8 tsp of nutmeg. Pour topping to 12 pieces of well-greased muffin molds. To create the muffin, whisk nutmeg, sugar, salt, baking powder and flour.
Lightly beat egg then add peel and juice, butter and milk, then pour this mixture to flour and combine. Pour mixture in muffin molds ’til full 3/4. Bake, 400 deg Fahrenheit, 20 mins, ’til brown in color. Serve muffins with bottom side up.
