Give this simply delicious muffin recipe a shot. Perhaps when taking your breakfast or maybe brunch this weekend. They’re simply very good and very easy to make when taking tea during morning or as a special treat in your kid’s lunch box.

First determine the amount of ingredients together both your dry and wet ones and portion them exactly then place them on your counter table as part of your pre preparations.

Put in some extra flavors like seasonal fruits: some apples, rhubarbs, blueberries, raspberries and maybe chocolates (dark or white). Just divide the mixture into half then blend the other batch with your special choice of flavorings.

You may choose up to any flavors, as limitless as your creativity and imagination may take you. Definitely this would be your personal favorites and you might end up making these really delicious muffins on a regular basis.

This particular recipe originally came from one colleague and it was so good that I had to ask for the muffin recipe and now I’m sharing it with you guys. I have already made some changes and revisions to the recipe and found out some great new combinations too.

MUFFINS

Items needed:

40 grams Oatbran
550 grams Flour (self-rising)
100 grams Sugar (brown)
130 grams Sugar (raw)
10 grams Baking Soda (Baking Powder)
20 grams Cornflour

130 ml of Oil
2 large pieces of eggs
1 teaspoon of Vanilla

Preparation:

Whisk in vanilla, eggs and oil altogether. Then gradually add the rest of the items. While adding any flavor of your choice perhaps some chocolate powder (cocoa powder) and bits of chocolates, mixed assorted berries, bran flakes and banana in your mixture.

Once batter seems to dry up gradually add in some milk for the mixture to get moist a bit and the consistency should be that if you scoop up your batter using your spoon and then you turn it down that it must easily drop down.

Preheat oven to about 175 degree Celsius then bake muffins in your oven for about fifteen minutes, till they’re quite firm enough if you touch them.

After muffins have been cooked, take them out from your oven then leave them inside their muffin molds for 5-10 minutes just enough for them to cool off. After they have cooled sufficiently then remove them from their molds and allow them to cool off in a wire rack.

The recipe approximately makes twelve muffins.

Some useful tips:

You could try and make double chocolate-flavored muffins then serve them together with some choco sauce and ice cream as a lovely dessert. Just use less 30 grams of flour then blend in 30 grams powdered cocoa instead. Add in some choco chips before you bake your muffin batter too for a very chocolate flavor
