Sunshine Muffins Recipe
Ingredients:
1 can of pineapple (crushed; 8&1/4 oz)
1.5 c of Bisquick
4 Tbsps of sugar
1 pc of egg (beaten)
1 Tbsp of peel of orange (finely shredded)
Milk
Instructions:
Separate liquid from pineapple and reserve syrup, and pour enough amount of milk into syrup and reserve 3/4 c of liquid. Mix 3 tablespoons of sugar with Bisquick. Blend syrup reserved earlier, 1/4 c of drained fruit and egg then add them to non-wet ingredients. Mix it ’til moist, then grease the muffin tin cups and fill up to 2/3.
Mix the rest of pineapple (drained), peel and 1 tablespoon of sugar. Put 1 tablespoon of mixture on top of batter into muffin tin cups and bake it for 20 to 25 mins, 400 deg Fahrenheit.
