Raisin Muffins Recipe
Ingredients:
3/4 c of milk
1 c of rolled oats
1 c of flour; sifted
2-1/2 tsps of baking powder (Calumet)
1/4 c of sugar (refined)
1/2 c of raisins (dark or white)
1/2 tsp of salt
1/2 c of chopped walnuts
1 pc of egg (large)
1/4 c of oil
Instructions:
Combine milk and oats; set on side till the oats moisten. Combine flour, Calumet, sugar, and salt inside a bowl then mix them well. Stir in the nuts and raisins. Add oil and egg into softened oats; beat them well using a fork and add onto the mixture of flour. Stir gently till mixture becomes moist.
Grease 12-cup (muffin) pan. Transfer the batter onto the pan and fill 2/3 of cup. Bake inside preheated oven 400 degrees Fahrenheit for fifteen mins or till brown. Serve while warm.
