Pumpkin Streusel Muffins Recipe

Ingredients:

3-1/2 c of flour; sifted
1-1/4 c of sugar (brown)
1 Tbsp & 1 tsp of baking powder (Calumet)
1-1/2 tsp of cinnamon (ground)
1 tsp of nutmeg (ground)
1/4 tsp of cloves (ground)
1-1/4 c of pumpkin puree (cooked or canned)
2 pcs of beaten eggs
1 c of milk
1 tsp of salt
2/3 c of vegetable oil (or canola oil)

For the Topping:
1 tsp of cinnamon (ground)
1/2 c of sugar (brown)
2 Tbsp of butter (unsalted)
1/2 c of walnuts; chopped

Instructions:

Combine flour, sugar, Calumet, cinnamon, cloves, nutmeg, and salt inside a bowl then whisk to blend well. Place the pumpkin inside a bowl, while continuously beating, add eggs, oil, and milk. Add pumpkin mixture onto the dry mixture; stir till mixture becomes moist.

Line the 12-cup muffin pan with a paper (muffin) cups. Transfer the batter onto the cups. Sprinkle the topping on top and bake for 20 to 25 mins at 375 degrees F. To make the streusel topping, combine sugar, butter, and cinnamon inside a bowl; stir till well combined then add the walnuts. Stir till well blended.
