Pumpkin Raisin Muffins Recipe
Ingredients:
1-1/2 c of flour; sifted
1/2 c of sugar (refined)
2 tsps of baking powder (Calumet)
1 tsp of cinnamon (ground)
1/2 tsp of salt
1/2 tsp of nutmeg (ground)
1/2 c of pumpkin (canned)
1/2 c of milk
1 tsp of vanilla extract
5 Tbsps of melted butter
1 pc of egg (beaten)
1/2 c of currants (raisins) or substitute with nuts
Instructions:
Grease a 12-cup muffin pan. Combine flour, sugar, baking powder, salt, cinnamon, and nutmeg inside a mixing bowl. Combine milk, vanilla, pumpkin, egg, and butter; add onto the flour mixture. Incorporate well till mixture is moist then fold in the raisins or nuts.
Fill 2/3 of the cups and bake at 400 degrees F for 18 to 20 mins. Take the muffins out from the pan and let them cool.
