Pineapple Muffins Recipe
Ingredients:
2 c of flour; sifted
2 tsps of baking powder (Calumet)
1/2 tsp of soda (Arm & Hammer)
3-1/2 oz of instant pudding mix (vanilla)
2/3 c of sugar (brown)
1 pc of beaten egg
1 c of sour cream (dairy)
8 oz of crushed pineapple (with juice, canned)
1/2 c of oil
Instructions:
Preheat the oven at 425 deg Fahrenheit. Spray 12-cup muffin pan with a nonstick (cooking) spray. Combine flour, Calumet, soda, sugar, and vanilla pudding.
Combine (sour) cream and egg then add oil and pineapple; add onto the dry mixture. Stir gently till moistened. Fill into the pan and bake inside preheated oven for fifteen mins.
