Pear Walnut Muffins Recipe
Ingredients:
1-1/2 c of flour (all purpose)
1/2 c of sugar (brown)
2-1/4 tsps of baking powder (Calumet)
1 tsp of cinnamon (ground)
1/2 tsp of ginger (ground)
1/2 tsp of salt
1 pc of pear (medium); peeled then minced
1 pc of egg (large)
1/2 c of yogurt (plain)
1/2 c of vegetable oil (or canola oil)
For the Topping:
3 or 4 Tbsps of nuts (walnuts or pecans); minced
3 or 4 Tbsps of sugar (brown)
Instructions:
Preheat the oven at 350 degrees Fahrenheit. Combine flour, baking powder, cinnamon, ginger, and salt inside a mixing bowl then add brown sugar by rubbing them through a sifter. Add the pear. Beat egg, vanilla, oil and yogurt; add onto the dry mixture. Stir gently till moistened.
Spoon onto buttered muffin pan, fill 2/3 of the cup. Combine nuts and sugar for the topping; place the toppings on top of the muffin. Place inside the preheated oven and bake till slightly brown or 20-25 mins.
