Orange Cherry Muffins Recipe
Ingredients:
1 c of sourcream
1/4 c of fresh orange-flavored juice
1/3 c of light-brown sugar; packed firmly
1/4 c of butter (unsalted); softened and cooled
3/4 tsp of salt
2 tsps of baking powder
1/4 c of sugar (granulated)
1 & 1/2 c of red cherries (6 oz); dried
1 & 1/2 orange rind; grated finely
1 egg (large)
1 & 1/2 c of flour (all-purpose)
1 tsp of baking soda
1 tsp of cinnamon
Instructions:
Whisk sourcream, rind, sugars, juice, butter and egg together in bowl ’til everything is well combined. In separate bowl, combine flour, salt, cinnamon, baking powder and soda. Add in sourcream mixture, then stir ’til evenly combined. Fold cherries into batter.
Scoop batter evenly into 12 greased half-cup muffin pans. Bake at 400 degrees F for 15-20 mins or ’til golden-brown. Cool on pans for two minutes, then turn out into wire racks to completely cool.
