Oatmeal Streusel Muffin Recipe
Ingredients:
2 & 1/2 c of oats (quick-cooking) plus 1/3 c
3 tsps of baking powder
1/2 tsp of salt
1/2 c of melted butter
1 & 1/2 c of buttermilk
1/3 c of packed brown sugar
2 c of flour (all-purpose)
1/4 c of sugar plus 1 Tbsp
1/4 tsp cardamom
1 egg (large)
1/3 c of nuts; chopped
Instructions:
Prepare the oven. Heat it to four hundred degrees Fahrenheit. Flour and grease 12 muffin cups. Combine 2 & 1/2 c oats, baking powder, flour, sugar, cardamom and salt in bowl. In separate bowl, mix butter, buttermilk and egg, mix thoroughly. Add in dry mixture, stir well ’til everything is moistened.
For topping: In small-sized bowl, mix 1/3 c of oats, 1/3 c of sugar and nuts, mix very well. Pour batter evenly into muffin cups, filling 2/3 of every cup. Sprinkle each cup w/ topping. Bake muffins for 18-20 mins or ’til muffin test is done.
