No Fat Lemon Muffins Recipe
Ingredients:
2 c of flour
1/4 c of sugar
1 tsp of (baking) soda
2 slightly beaten eggs
1/2 tsp of salt
1 & 1/4 c of fat-free yogurt (lemon-flavored)
1 Tbsp of lemon rind; grated
1 tsp of baking powder
1/4 c of skimmed milk
2 Tbsp of honey
1/2 c of lemon-flavored juice
Instructions:
Combine baking powder and soda, salt, sugar and flour in mixing bowl. Separately combine eggwhites, lemon-flavored juice, yogurt, honey, milk and lemon rind. Combine both mixtures and blend well.
Bake at three hundred seventy-five degrees Fahrenheit for fifteen to twenty minutes.
