No Fat Cranberry Muffins Recipe
Ingredients:
1/2 c of prunes; pitted
1 & 1/3 c of flour
1/2 c of skimmed milk
2 Tbsps of water
3 tsps of vanilla
1 tsp of baking soda
2 slightly beaten eggwhites
3/4 c of sugar
1/4 tsp of salt
1 c of old-fashioned oats (rolled)
1 tsp of baking powder
1/2 c of fresh cranberries (whole)
Instructions:
Prepare oven. Heat it to three hundred seventy-five degrees Fahrenheit. Place water and prunes in blender, then puree. Mix oats, flour, sugar, salt, (baking) powder and soda in mixing bowl. Separately combine puree, eggwhites, milk, cranberries and vanilla.
Add both mixtures ’til dry components are moist. Pour batter into non-stick muffin tins. Bake muffins for eighteen minutes ’til top layer becomes light brown.
