No Fat Cinnamon Raisin Muffins Recipe
Ingredients:
1 & 1/4 c of flour
1/4 c of sugar
2 tsps of cinnamon
1/4 c of egg substitute (non-fat)
3 tsps of vanilla
1/2 c of regular Cream-of-Wheat cereal
1 Tbsp of baking powder
1 c of non-fat milk
2 Tbsp of prune-butter
1 c of raisins
Instructions:
In medium-sized bowl, mix cereal, (baking) powder, sugar, cinnamon and flour, set it aside. Mix egg-substitute, vanilla, butter & milk, in separate bowl. Blend onto dry mixture ’til moistened. Add in 1 cup of raisins.
Scoop a spoonful of mixture into twelve non-stick muffin cups. Bake for eighteen to twenty minutes at four hundred degrees Fahrenheit.
