Mango Muffins Recipe
Ingredients:
1 pc of egg
1.5 c of mangoes (ripe); diced
1/2 c of sour cream
4 Tbsps of butter; softened & cooled
1 tsp of vanilla
1 tsp of baking powder
2 c of flour
1/4 tsp of salt
1/4 tsp of (baking) soda
1/2 c of milk
1/3 c of unsalted nuts (Macadamia) chopped
1/4 c of flour
2 Tbsps of butter
1/4 c of (brown) sugar (light)
1/4 tsp of cinnamon
Instructions:
To make the topping, combine flour, nuts, sugar and cinnamon. Cut in butter using fingers or fork. Set it aside in refrigerator. Butter a 12 cup muffin pan. Include areas around muffin cups to avoid sticking after baking. Beat butter, vanilla, milk and cream together into a large-sized bowl.
Create a hole in middle of flour mixture and combine the wet ingredients. Blend ’til just moistened. Fill muffins with the mixture using large-sized spoon.
Sprinkle toppings over muffins and let it bake into a preheated oven with temperature of 400 degrees-F for 25 to half an hour or ’til cake tester comes clean w/ crumbs after inserting. Allow to cool inside pan.
