Mango Coconut Muffins Recipe
Ingredients:
1 tsp of baking soda
2 & 3/4 c of flour (all purpose)
3/4 c of butter; at room temperature
1 pc of egg
1/2 tsp of salt
1 c buttermilk
1/2 c of coconut; flaked
1 Tbsp of corn syrup or honey
1 tsp of vanilla
1 c of mango; chopped
1 tsp of lime zest (optional)
1 c brown sugar
Instructions:
Combine baking soda, salt and flour together into a large-sized bowl. Cream sugar and butter together into another bowl. Whisk in the egg, vanilla and buttermilk. Blend wet ingredients to dry mixture. Fold in coconut, zest and mangoes. Mix ’til just combined.
Fill muffin tins lined with paper cups three-fourths full. Let muffins bake for half an hour or ’til springs back when touched at an oven temperature of 350 degrees F. Drizzle honey over muffins. Transfer to wire racks and serve after cooling.
