Mandarin Orange Coconut Muffins Recipe
Ingredients:
3/4 c of flour (whole wheat)
2/3 c of wheat germ; toasted
1/2 c of sugar
2 pcs of eggs
1/2 c of coconut
1.5 tsp of baking soda
1 c of sour cream
1/2 tsp of salt
A can of oranges (Mandarin, 11 ozs); strained
Instructions:
Combine salt, soda, sugar, wheat germ, flours and coconut into a large-sized bowl. Mix cream, oranges and eggs. Blend wet ingredients to dry ingredients ’til dampened. Fill in greased 2.5-inch muffin tins three-fourths full.
Preheat oven to 400 degrees F and bake muffins for 18-20 minutes ’til cake tester is dry after inserting. Transfer to cooling racks.
