Low Fat Lemon Poppyseed Muffins Recipe

Ingredients:

1/3 c of milk
2 Tbsps of veggie oil
1/4 c of apple sauce
1 yogurt (lemon-flavored, low fat, 6 ozs)
1 pc of egg
1/4 c sugar
1-3/4 c of flour
1 Tbsp of lemon rind (grated)
2 Tbsps of poppyseeds
2.5 tsps Calumet (baking powder)
1/2 tsp of Arm and Hammer's (baking soda)
1/2 tsp of salt 

For the Glaze:
2 tsps lemon juice
1/2 c of Confectioners' sugar 

Instructions:

Preheat oven (400 degrees F). Line the bottom of the muffin mold (or cups) with paper-liners. Set aside.

Meanwhile, combine oil, apple sauce, milk, egg and yogurt altogether in a mixing bowl. Beat it well 'til thorouhgly mixed. Add in the other ingredients that are remaining, excluding glaze. Stir lightly just to incorporate well. Evenly pour batter onto the individual molds.

Bake for 15-18 minutes (or just 'til inside of the muffin is cooked - use muffin test). While waiting - prepare the glaze by mixing Confectioners' with lemon juice. Set aside. Remove muffins from the oen when done. Drizzle with glaze.
