Low Fat Chocolate Muffins Recipe
Ingredients:
1.5 c of flour
1/2 tsp of salt
3/4 c sugar (granulated)
2 tsps of baking powder
1/4 c of cocoa
1/2 tsp of vanilla
1 tsp of (baking) soda
2/3 c of vanilla yogurt (low fat)
2/3 c of (skim) milk
Confectioner’s sugar
Instructions:
Line each muffin tins with baking cups, 2.5 inches in diameter. Sift salt, soda, baking powder, cocoa, sugar and flour into a medium-sized bowl. Add in vanilla, yogurt and milk ’til just combined. Don’t beat mixture.
Pour batter in muffin tins two-thirds full and bake 15 to 20 minutes ’til cake tester comes clean after inserting at center of the muffins. Slightly cool tins over racks. Remove muffins from cups and sprinkle confectioner’s sugar if you want. Best served hot and moist.
