Lemon Poppy Seed Muffins Recipe
Ingredients:
1 & 1/4 c of all purpose flour
1/2 c of sugar
1/2 tsp of salt
2 Tbsps of poppy seeds
1 Tbsp of lemon zest
2 tsps of baking powder
1/4 c of cooking oil
1 pc of egg; whisked
3/4 c of milk
Glazing:
2.5 tsps of lemon juice
1/2 c of confectioner’s sugar
Instructions:
Combine salt, baking powder, lemon zest, seeds, half cup of sugar and flour into a medium-sized bowl. Blend milk, oil and egg into a separate bowl. Blend wet ingredients to flour mixture, mix ’til moistened.
Fill greased muffin tins two-thirds full. Let it bake into a preheated oven with a temperature of 374 degrees F. Set aside to cool for five minutes. Transfer muffin to paper cups. Combine confectioner’s sugar and lemon juice, drizzle over hot muffin.
