Gingerbread Muffins Recipe
Ingredients:
24 Tablespoons of flour; sifted
3/4 teaspoon of baking soda
1/2 teaspoon of cinnamon (ground)
1/2 teaspoon of ginger
1/4 teaspoon of salt
1/4 teaspoon of cloves
4 Tablespoons of sugar (refined)
4 Tablespoons of shortening
16 Tablespoons of egg
8 Tablespoons of molasses (mild flavored)
8 Tablespoons of water (hot)
Instructions:
Grease 12 2-1/2-inch (muffin) cups. Mix flour, soda, ginger, cinnamon, cloves, and salt inside a large bowl. Cream shortening and sugar till fluffy and light. Add molasses and eggs; beat thoroughly then add the flour mix.
Incorporate well and slowly add (hot) water; mix till smooth. Fill the cups with the batter and bake for twenty mins, 375 degrees Fahrenheit.
