Ginger Raisin Muffins Recipe
Ingredients:
1/2 c of shortening
2 pcs of eggs (large)
1/2 c of sugar (white)
1/2 c of molasses
1 tsp of soda (Arm & Hammer)
2 c of flour (all purpose)
1/2 c of buttermilk
1/4 tsp of cinnamon (ground)
1 tsp of ginger
1/4 c of chopped pecans
1/4 tsp of cloves
1/2 c of raisins
Instructions:
Beat sugar and shortening till creamy. Add in the eggs individually, while beating continuously. Combine soda and buttermilk. Combine flour and spices. Alternately add dry mixture and buttermilk onto the creamy mixture.
Fill 2/3 of the (muffin) cups and bake at 350 degrees F for 15 mins.
