Eggnog Muffins Recipe
Ingredients:
2 c of flour; sifted
1 Tbsp of baking powder (Calumet)
2/3 c of sugar (white)
1/2 tsp of salt
3/4 c of eggnog (dairy or homemade)
1/3 c of canola oil (or vegetable oil)
1 pc of egg (large)
1 tsp of nutmeg (ground)
1/4 c of rum
1/4 c of sugar (refined)
Instructions:
Combine flour, Calumet, sugar, and salt inside a large bowl. Add egg, eggnog, rum, and oil. Mix thoroughly. Spray the (muffin) pans then scoop the batter onto the cups, filling it to 3/4. Sprinkle with refined sugar and nutmeg. Bake, 350 deg F for 15-20 mins.
