Easy English Muffins Recipe
Ingredients:
2 pkgs of yeast (active, dry)
2 c of water (warm)
5 to 6 c of flour; sifted
1 Tbsp of sugar (white)
3 tsps of salt
1/2 c of shortening
Butter (or margarine)
Cornmeal
Instructions:
Dissolve the active yeast with (warm) water inside a mixing bowl. Add (3 cups) flour, salt, shortening, and sugar; stir manually till moistened and smooth. Slowly add in the rest of flour while beating continuously to make the dough stiff. Knead on floured board 5 or 6 times till the dough isn’t sticky anymore.
Roll to a 1/4 or 3/8 thick and cut using a circular cutter. Spread evenly the cornmeal on two baking sheets. Arrange the round dough over cornmeal layer then sprinkle the cornmeal on top also. Cover them loosely using a plastic wrapper and cloth.
Allow to rise till light, at about 30 to 45 mins. Heat the griddle 350 degrees F. Invert the prepared dough in the heated griddle and bake till slightly brown, about 5-6 mins per side.
