Cranberry Muffins Recipe
Ingredients:
1 c of applesauce (unsweetened)
1/3 c of vegetable oil (or canola)
1 pc of beaten egg
2 c of flour; sifted
1/2 c of sugar (white)
1 tsp of soda (Arm & Hammer)
1/2 tsp of salt
1 tsp of cinnamon (ground)
1 c of chopped cranberries (fresh or frozen)
1/2 c of chopped pecans
Instructions:
Preheat the oven, 350 deg F. Grease a (muffin) pan and coat small amount of flour. Combine applesauce, egg, and oil inside a bowl; set aside. Combine sugar, flour, cinnamon, salt, and soda inside large mixing bowl; blend them well then add the wet mixture.
Incorporate well till moistened. Add pecans and cranberries; stir gently. Scoop onto prepared cups, about 2/3 of the cup. Bake inside the oven, 25-30 mins. Allow to cool for two mins before taking the muffins out from the cups.
