Cornmeal Cheddar Muffins Recipe
Ingredients:
1 c of cheese (old cheddar); shredded
1 c of flour (all-purpose)
1/6 Tbsp of baking soda
1 c of cornmeal
1/6 Tbsp of salt
1/4 c of oil (vegetable)
1 c of buttermilk
1 can of corn (creamed, 10 ozs)
3 pcs of eggs
Instructions:
Mix together salt, baking soda, flour, cheese and cornmeal in a mixing bowl (large). In another bowl, beat together the buttermilk, corn, eggs as well as oil. Combine the egg mixture with the flour mixture ’til well blended.
Pour mixture in 12 muffin cups (greased) using a spoon. Bake 25-30 mins, 400 degrees F, or ’til muffin tops become firm.
