Corn Muffins Recipe
Ingredients:
1 c of cornmeal
1 c of flour
1/4 c of sugar
3/4 tsps of salt
4 tsps of baking powder
2 pcs of egg
1/4 c of shortening (melted) or oil
1 c of milk
Instructions:
In a mixing bowl, beat together the sugar, cornmeal, flour, (baking) powder as well as the salt, then mix in the eggs, oil/shortening (melted) and milk. Mix ’til smooth but don’t over beat. Put mixture into muffin pan (greased) and place in the oven for 15-20 mins, 400 deg F.
