Coffee Coconut Muffins Recipe
Ingredients:
1/2 c of sugar (light brown, packed)
1/2 c of margarine
2 pcs of eggs
1/2 c of sugar
1 & 3/4 c of flour
1/4 tsp of salt
1 Tbsp of baking powder
1/2 c of coffee (strong, brewed)
2 tsp of vanilla extract
1/3 c of milk
1/2 c of pecan nuts; chopped coarsely
1/4 tsp of almond extract
3/4 c of coconut
Instructions:
Preheat oven, 375 degree F. Grease then drizzle with flour (or paper-line) 12 molds for muffins. Using electricity-operated mixer, cream sugars and margarine ’til fluffy and light; add eggs gradually one by one. Sift salt, flour and baking powder.
Mix with coffee, almond, milk and vanilla. Alternately drop this mixture with mixture of flour to mixture of margarine. Add coconut and nuts. Pour batter into muffin molds then bake 25 – 35 minutes ’til wooden stick inserted into middle of muffins will come out without sticky crumbs.
