Chocolate Raspberry Muffins Recipe
Ingredients:
15 ozs of raspberries (canned)
2 c of flour (self-rising); sifted
1/2 c of sugar
1 pc of egg; beaten lightly
1/2 c of choco chips
2 ozs of butter; melted
3/4 c of buttermilk
Instructions:
Preheat the oven, 375 deg F. Prepare muffin tin pans by greasing them. Drop raspberries (undrained) to pan and boil (12 minutes) ’til mixture becomes like jam and thick. Avoid stirring and allow to cool.
Mix chocolate, sugar as well as flour then pour into combination of buttermilk, egg and butter. Fold mixture with raspberry. Pour mixture into the pans then bake 15 mins ’til done.
