Chocolate Macaroon Muffins Recipe
Ingredients:
1/4 c of margarine or butter
1 tsp of vanilla
1/2 c of sugar
3/4 c of flour
3/4 tsp of baking powder
2 pcs of eggs (large)
1/4 c of cocoa (unsweetened)
For the Macaroon Filling:
1/2 c of sugar
3/4 c of almond paste
Whites from 2 pcs of eggs (large)
1/4 c of coconut (unsweetened & flaked)
Instructions:
To create the filling, beat sugar as well as almond ’til mixture becomes coarse; add whites of eggs gradually, beating ’til smooth. Add coconut and set filling aside. Beat into blending vanilla, sugar as well as 1/4 c of butter ’til fluffy.
Add eggs one by one while beating. In separate bowl, mix baking powder, cocoa as well as flour then add to vanilla mixture; stir ’til well-mixed.
Reserve half of batter and pour the rest into 8 greased muffin tin cups and top with half of filling. Add the reserved batter on top and sprinkle with rest of filling. Then bake, 350 deg F, ’til muffins bounce back if pressed gently and when filling becomes light brown in color. Approximately 25 mins.
