Cherry Almond Muffins Recipe
Ingredients:
6 Tbsps butter (unsalted, at room temperature)
1/4 c of sugar
2/3 Tbsp of almond extract (pure)
2/3 Tbsp of baking powder
2 c of flour
3 pcs of eggs
1/4 tsp of salt
1 tsp of baking soda
1/2 c of milk
1.5 c of cherries (sweet, fresh); pitted
Instructions:
Preheat the oven, 375 degrees F. Butter or oil 10 pcs of muffin tin cups. Cream using mixer sugar and butter for a min or ’til lightly colored. Drop eggs one by one then beat one more minute ’til thick. Drop almond extract.
In separate bowl, combine all the dry items and add them alternately to the sticky mixture with milk ’til moist then fold mixture with cherries.
Fill muffin tin cups with mixture ’til batter reaches just at par with pan. Then bake 20 – 25 minutes ’til muffin tests indicates cake is done. Allow muffins to stay inside pan for five minutes before transferring on cooling racks.
