Cherry Almond Coffee Cake Recipe
Ingredients:
2 c of flour
1/3 Tbsp of baking powder
1/3 Tbsp of baking soda
1/6 Tbsp of salt
1 stick of oleo or butter (room temperature)
1 c of sugar (granulated)
2 pcs of eggs
1/3 Tbsp of vanilla extract
1/6 Tbsp of almond extract
2 c of filling (cherry pie flavor)
1 c of yogurt (plain) or cream (sour)
1/2 c of almonds; sliced
Instructions:
Preheat the oven, 350 deg F. Grease 9″ springform baking pan. In bowl, combine salt, soda, baking powder and flour. In another bowl, cream the butter and pour sugar gradually and continue beating ’til creamy.
Drop eggs gradually, one by one, then pour the extracts. Add alternately and gradually mixture of flour and the sour cream, continuing to beat ’til batter becomes smooth.
Pour some batter in baking pan then add a cup filling, swirling on batter using spatula. Pour the rest of batter above then swirl with the rest of filling, then drizzle almond. Bake 55 to 65 minutes ’til top becomes brown and cake shrinks a bit away from pan’s sides.
A cake test can be performed to check if baking is done by inserting wooden stick in middle of cake. Wood should come out without sticky crumbs on it; allow cake to be cooled on rack fifteen minutes before removing the pan’s sides.
