Orange Blossom Muffins Recipe
Ingredients:
1 can of frozen concentrated orange-flavored juice (6 oz); thawed
2 Tbsp of oil (salad)
1/2 c of marmalade (orange)
1/2 c of sugar (granulated)
1/2 tsp of cinnamon
1 Tbsp of butter (room temp.)
2 c biscuit ready-mix (Bisquick)
1/2 c toasted pecans; chopped
1 & 1/2 Tbsp of flour
1/4 tsp of nutmeg
Instructions:
Prepare oven. Heat it to four hundred degrees Fahrenheit. Combine juice, oil, egg and 1/4 c sugar. Add in biscuit mix, then vigorously beat for thirty seconds. Add in pecans and marmalade. Scoop batter into 12 greased muffin cups.
Separately combine 1/4 c sugar, nutmeg, flour and cinnamon. Add butter in and blend ’til mixture becomes crumbly. Dust this dry mixture all over batter and bake for 20-25 mins.
