Corny Bacon Muffins Recipe
Ingredients:
3 Tbsps of sugar
1/2 tsp of salt
6 slices of bacon
1/2 c of corn (kernels)
1 c of milk
1 pc of egg
1 Tbsp of baking powder
1 c of flour (all-purpose)
1/4 c of bacon drippings
Instructions:
Cook bacon ’til crispy. Put bacons above paper towel to take out excess oil. Set 1/4 c of drippings from bacon. Break bacon to pieces then put it aside. Using mixing bowl (medium), mix and flip together the cornmeal, flour, sugar, salt and baking powder. While in another bowl, beat egg, milk, drippings (bacon) and kernels ’til well-mixed.
Put into flour mixture, together with the bacon (crumbled) and combine ’til well-mixed. Using a spoon, pour contents into greased muffin cups ’til 2/3 full. Put in oven and bake, 400 degrees F, 15 mins. Invert pan, removing muffins after letting it cool (about 3 mins).
