Lemon Sunshine Muffins Recipe

Ingredients:

1/4 cup of margarine or butter; at room temperature
3/4 cup of sugar (refined)
2 pieces of eggs
3/4 cup of yogurt (lemon flavor)
1/2 teaspoon of juice (lemon)
1/4 teaspoon of nutmeg
1 teaspoon zest of lemon
1 & 1/3 c of all purpose flour
1/4 teaspoon of salt
1/2 teaspoon of baking soda
1 teaspoon of cinnamon
1/4 teaspoon of ginger

For Glaze:
2 teaspsoons of juice (lemon)
1/2 cup of powdered sugar

Instructions:

Grease or paper line muffin pans. Cream sugar and butter together ’til fluffy and light into a large-sized bowl. Add in eggs, juice, yogurt and zest. Mix nutmeg, cinnamon, salt, soda and flour into creamed mixture ’til blended well.

Fill batter to muffin pan and bake inside a heated oven with a temperature 400 degrees F for 15-18 minutes ’til top bounces after touching lightly. Allow muffin pan to slightly cool, about fifteen minutes. For the glaze, combine powdered sugar and juice ’til smooth in consistency, pour glaze over muffins.
