Double Chocolate Muffins Recipe
Ingredients:
1/2 c of butter (or margarine)
3 sq of chocolate (unsweetened); broken
1 c of sugar (white)
1 pc of egg (large)
2 tsps of vanilla
1 c of buttermilk
1/2 tsp of salt
2 c of flour; sifted
1 tsp of baking soda (Arm & Hammer)
1 c of chocolate morsels (semisweet)
Instructions:
Preheat the oven at 400 deg F. Grease a 12-cup muffin pan. Melt chocolate and butter inside the microwave for 2-1/2 mins on a high setting or till smooth and melted. Let it cool into lukewarm then add egg, sugar, salt, buttermilk, and vanilla; stir thoroughly.
Combine soda with the flour; add to the mixture of chocolate. Incorporate well and fold in the morsels. Fill the greased cups and bake for 15-20 mins. When done, let them cool for five mins in the pan then remove the muffins and allow to be completely cooled on the racks.
