Pina Colada Muffins Recipe
Ingredients:
19 oz of crushed pineapple (canned); drained
16 Tablespoons of sour cream (dairy)
8 Tablespoons of sugar (granulated)
1 piece of egg (large)
4 Tablespoons of butter (or margarine)
1 teaspoon of rum extract
1-1/2 cups of flour; sifted
1 teaspoon of baking powder (Calumet)
1/2 teaspoon of baking soda (Arm & Hammer)
8 Tablespoons of coconut
1/2 teaspoon of salt
12 pieces of cherries (Maraschino); chopped
Instructions:
Combine (sour) cream, egg, rum extract, sugar, and butter inside a mixing bowl. Combine the flour, Calumet, salt, and soda; add onto the wet mixture. Carefully add the fruits.
Fill onto 12 slightly greased muffin cups. Bake at 375 degrees F for twenty mins or till the top of muffin bounces back when pressed gently.
