Carrot Cake Muffins Recipe
Ingredients:
2 pcs of eggs
1.5 c of carrot; grated
1/2 c & 2 Tbsp of oil
1.5 c of flour
1/2 c of raisins
2 & 1/4 tsp of baking powder
1/2 c of sugar
1/4 tsp of salt
1/2 tsp of nutmeg
1.5 tsp of cinnamon
Instructions:
Preheat the oven, 400 deg F. Line wax paper or butter/oil muffin pans. In huge bowl, beat sugar, oil as well as eggs ’til smooth. Add raisins and carrots.
In separate bowl, combine the rest of the ingredients then add this mixture into egg mixture, stirring ’til well-combined. Bake 20 – 25 mins.
