Candy Apple Muffins Recipe
Ingredients:
1/2 c of sugar (granulated)
2 c of flour
1 Tbsp of baking powder
1/4 tsp of nutmeg (ground)
1/2 tsp of salt
1/2 c of milk
2 pcs of eggs
1/4 c of margarine or butter; softened
1 c of apple; chopped
1 tsp of vanilla
For the Glaze:
1/2 c of sugar (dark brown, packed)
1/2 c of honey
3/4 c of walnuts; chopped finely
Instructions:
Preheat the oven, 400 deg F. Oil or butter 36 pieces of mini-muffin tin cups. Using bowl, mix together nutmeg, salt, baking powder, sugar (granulated) and flour. In smaller bowl, mix ’til blended the vanilla, eggs, butter and milk. Add this mixture to flour combinations ’til moistened, then fold with the apples then pour mixture in muffin molds.
Bake 10-12 minutes ’til muffins are light brown in color and when a wooden stick is without crumbs when pulled out from muffin. Take away from the pan. For glazing, combine sugar (brown) and honey then allow to boil on medium-high flame, stirring ’til sugar is dissolved. Dip muffins while still warm into this mixture, and then on nuts.
