Blueberry Sour Cream Muffins Recipe
Ingredients
Zest of one lemon
2 1/4 c of blue berries
2 c of sour cream
1 tsp of Arm and Hammer (baking soda)
1 tsp of salt
4 c of flour (all purpose)
1 tsp of vanilla essence
1 c of vegetable oil
2 c of sugar (white)
4 whole eggs
Instructions:
Heat oven 400 deg Fahrenheit. Whisk eggs. Slowly add the sugar beat until incorporated. Gradually pour in the oil. Add the vanilla. Using another bowl sift together the flour, Arm and Hammer (baking soda) and salt. Mix the flour mixture to the egg mix.
Add the sour cream then carefully fold the blue berries in. Pour batter onto muffin trays. Top with sugar cinnamon mixture. Bake for twenty mins. Serve with whipped cream or cream cheese on the side.
