Blueberry Corn Muffins Recipe

Ingredients

Sugar cinnamon
1 c of blue berries
2 tsps of baking powder
2/3 c of corn meal
1 c of flour (unbleached)
2 tsp of vanilla essence
1/2 c of orange (juice)
2 whole eggs
1 c of sugar (light brown); compact
1/2 of butter; softened

Instructions:

Heat oven, 375 degrees F. Cream butter and sugar until airy and light. Whisk in eggs, vanilla and juice. Using a different bowl, sift together flour, baking powder and cornmeal. Incorporate flour mixture to your butter mixture; fold blue berries in.

Pour batter onto greased baking or muffin trays. Top with sugar cinnamon. Bake twenty mins until done.
