Banana Pineapple Streusel Muffins Recipe
Ingredients:
3 c of flour
3/4 tsp of salt
1 tsp of Arm and Hammer (baking soda)
2 c of sugar
1 tsp of cinnamon powder
3 whole eggs; beaten
1 c of vegetable oil
2 c of banana (ripe); mashed
1 c pineapple (18 ozs); crushed then drained
2 tsp of vanilla
1/2 of sugar
1/3 c of flour (all purpose)
1/2 tsp of cinnamon
1/4 c of butter; softened
Instructions:
Heat oven 375 deg Fahrenheit. Grease muffin tray. For the streusel, mix together sugar, cinnamon then add flour. Cut the butter in ’till mixture is crumbly.
For the batter, mix the flour, Arm and Hammer (baking soda), cinnamon, and sugar. Add salt. Whisk in eggs. Add the oil, pineapple then the bananas.
Add a few drops of vanilla. Mix batter completely. Pour batter on greased muffin trays and top with streusel. Bake twenty five minutes. It should be set by then.
