Apricot Muffins Recipe
Ingredients:
Zest of one orange
1/2 tsp of salt
1 tsp of Arm and Hammer (baking soda)
2 c of flour (all purpose)
1 c of sour cream
1/2 c of butter (room temperature)
1 c of sugar
1 c of water (hot & boiling)
1 c of apricots (dried); chopped
Instructions:
Place chopped apricots inside pan with water. Heat to boiling for two mins. Cream butter and sugar. Combine the sour-cream. Mix thoroughly. Next, sift the flour, baking soda, salt and the zest of your orange to the mixture.
Make sure to mix everything completely. Fold the apricots to the cake batter. Pour batter onto muffin tray. Bake for twenty mins under 400 deg Fahrenheit.
