Apricot Bran Muffins Recipe II
Ingredients:
1 c of apricot (canned or fresh)
Zest of one lemon
1/2 tsp of cinnamon
1/2 tsp of salt
1/2 tsp of Arm and Hammer (baking soda)
2 tsps of baking powder
1/3 c of sugar
1 c of flour
1/4 c of oil
1 egg
Instructions:
Mix together milk and bran. Let it stand a few mins. Blend the oil and whisk egg in. Set it aside. Using another bowl, mix together flour, Arm and Hammer (baking soda), sugar, cinnamon, salt, baking powder and the lemon rind.
Pour in your bran mix. Stir thoroughly and fold the apricots in. Fill in muffin pans and bake for twenty five mins under 400 deg Fahrenheit.
