Apricot Bran Muffins Recipe I
Ingredients:
1 cup apricots; dried & chopped
1 whole egg
1/3 c of sugar (brown & compact)
1 tsp of baking soda
1 c of flour (whole wheat)
1 1/4 c of buttermilk
1 1/2 c of wheat (bran)
Instructions:
Grease and prepare your muffin trays. Preset oven 350 deg Fahrenheit. Mix the buttermilk with bran. Set it aside. After fifteen minutes, mix together flour, sugar and Arm and Hammer (baking soda).
Combine flour mixture to the buttermilk-bran mix. Beat in one egg then fold apricots in to the mixture. Blend well. Place batter inside muffin trays. Bake eighteen minutes until set then take out of your oven and let cool five minutes prior to serving.
