Apple Maple Syrup Muffins Recipe
Ingredients:
1 & 1/3 c of all purpose flour
2/3 c of sugar
1 c of oats (quick cooking)
1 tablespoon of baking powder
1.5 teaspoon of cinnamon
1/3 c of margarine or butter; melted
1/2 c of milk
1/4 c of maple syrup (Vermont)
1 pc of egg; whisked lightly
2 c of apples; peeled & chopped
12 pcs of pecan (halves)
2 tablespoon of maple syrup (Vermont)
1/3 c of powdered sugar
Instructions:
Combine oats, flour, cinnamon, cinnamon and baking powder in large-sized bowl. Blend butter, milk, egg and maple syrup in small-sized bowl. Blend wet ingredients to flour mixture just ’til moistened. Add in the apples. Grease muffin tins or line them with paper cups.
Pour batter 3/4 full. Place one pecan on top of each muffin. Bake for 18 to 20 minutes into a 400 degree F oven. Remove from oven and allow to cool for ten minutes. Transfer to a cooling rack and drizzle glaze made from a mixture of 1/3 cup of powdered sugar with 2 tablespoons of maple syrup.
