Apple Cheddar Muffins Recipe
Ingredients:
1/2 c of shortening
1/4 c of butter; melted
3/4 c of sugar (refined); half ed
1.5 c of flour
2 pcs of eggs
1 teaspoon of baking powder
1/2 teaspoon of salt
1 teaspoon of baking soda
3/4 c of oats (quick-cooking)
2/3 c of cheese (Cheddar); shredded
3 pcs of apples; one cut into cubs & two sliced thinly
1/4 teaspoon of cinnamon
Instructions:
Cream shortening and half cup refined sugar together into a large-sized bowl. Mix in eggs a piece after another. Beat well every after egg. Set it aside. Blend baking powder, salt, flour and soda lightly. Combine the flour mixture to the sugar-shortening mixture gradually and beat ’til well blended.
Mix in cheese, oats and cubed apples; blend well every after adding an ingredient. Add the milk gradually and stir ’til mixture is dampened.
Greased twelve muffin cups and pour batter about 2/3 in each cup . On a bowl, mix the cinnamon and sugar.
Dip the slices of apple in the melted butter then on to the cinnamon mixture. Place a slice on every muffin then sprinkle the tops with the cinnamon mixture then bake into a preheated oven with a temperature of 375 degrees F for 25-30 minutes ’til golden-brown.
