Anadama Muffins Recipe
Ingredients:
1 c of all purpose flour
1 c of whole wheat flour
1 c of cornmeal (yellow)
1.5 tsp of baking soda
3/4 c of molasses
1.5 tsp of salt
1/4 c of vinegar (cider)
1.5 c of milk
1 c of raisins
2 Tbsps of butter; melted
Instructions:
Combine all purpose flour, cornmeal, whole wheat flour, salt and soda in a large-sized bowl. Use fork in mixing. Mix in butter, vinegar, molasses and milk. Briskly stir to mix well. Mix in the raisins. Grease 18 muffin cups and fill 2/3 of mixture.
Let it bake for 12-15 minutes at a 400 degree F oven or ’til wooden stick is dry after inserting in the middle of muffins. Don’t over bake. Remove muffins from oven. Best served hot.
