Amish Zucchini Muffins Recipe
Ingredients:
2 c of flour (whole wheat)
1 tablespoon of baking powder
3/4 teaspoon of salt
1 teaspoon of cinnamon
1/3 c of oil
2 pcs of eggs
1/4 c of honey
3/4 c of milk
1 c of zucchini; grated coarsely
1/4 c of nuts (optional); chopped
Instructions:
Preheat the oven with a temperature of 375 degrees-F. Grease the muffin tin. Combine flour, baking powder, salt and cinnamon. Beat honey, milk, oil and eggs into a small-sized bowl.
Blend wet ingredients to flour mixture. Mix to dampened. Stir quickly nuts and zucchini in. Bake ’til golden-brown for 20 to 25 minutes.
