Almond Cream Cheese Muffins Recipe

Ingredients:

1 pc of egg
6 ozs of cream cheese; at room temperature
1 Tbsp of sugar
1 & 3/4 c of almonds; toasted & chopped
1/3 c of brown sugar; packed
1 Tbsp of baking powder
1 teaspoon of salt
2 teaspoon of cinnamon
1 teaspoon of cloves
2 teaspoon of nutmeg
3/4 c of milk
1 c of pumpkin (canned)
2 pcs of egg; whisked
1/4 c of margarine or butter; melted

Instructions:

Beat egg, cream and 1 tablespoon of sugar together into a small-sized bowl. Set it aside. Combine almonds, baking powder, sugar, salt, flour and spices together into a bowl. In another bowl, blend butter, pumpkin, eggs and milk. Mix well. Combine the wet ingredients into the flour mixture. Blend ’til dampened.

Grease 18 muffin-cups and pour 1/2 of batter. Divide equally. Fill some cream filling on top of batter and divide equally. With the remaining 1/2 batter, top cream layer. Let it bake for 20-25 minutes at 400 degrees F or ’til light-golden. Remove muffin from cups and allow it to cool.
